The first one. So far I have played the Super Monkey Ball (GC), Super Monkey Ball 1 and 2 (iOS), and Super Monkey Ball 3D. The first, while being hard as nails, is a lot more rewarding, since it feels really good to finally beat that really hard level. The other games felt a lot easier and while its understandable, I still enjoy the first one more.

Super Monkey Ball 2 hands down.
Not only did it feature a storyline that you could look forward to after beating each world, the game was very entertaining, challenging and had some of the best multi-player mini games from a SEGA game that I actually sometimes play today.
The second game. Just for having a story mode and fun mini-games.

Super Monkey Ball 2. It had great party games, levels, and even if the story was tacky as possible, it was there. I still remember the commercial for it.

The first game in the series is probably the biggest favorite. I don't know how many hours me and my brothers spent playing Monkey Target and Race back then. Good times.
I'm going to be straight up, the only game I own (and thus the only one I've ever actually played) is Super Monkey Ball 2 for the GameCube. It's not because I'm not interested in them... just that I never think to get them. They always get overshadowed by SANICK and what not (plus I didn't actually own a Wii when Banana Blitz released).
If/when I get an Android game system[/plug], Monkey Ball 2 Sakura Edition will be one of the first paid apps on my list. The accelerometer seems like it would work extremely well with a game like this. I guess what I would like is if SMB became one of SEGA's top properties alongside Sonic, sort of like how Nintendo has Mario, Zelda, and Pokemon. Then another IP like Billy Hatcher or something would make it a similar trinity of sorts.
I think at the moment, mobile is a very good, accessible platform for the property, mainly due to the specific type of gameplay involved and playing audience. Monkey Ball is a fairly simple game that anyone can get into and it would bring a smile to my face if it could knock Angry Birds out of the park.
I really want to get into the series myself and feel like it's a nice place to start, seeing as it's a nice fresh platform that's just starting to get some really high-quality games (Sonic 4, Riptide, Shadowgun, etc).

2013: Year of the Chinese Knock-offs
I've only played Super Monkey Ball on the Wii (both), and 3DS. Out of those 3, I'd say Super Monkey Ball 3DS, but I never played the original 2 SMBs
EDIT: I have played Super Monkey Ball 2: Sakura Edition, it beats the 3DS version, but 3DS comes second.
